Chicken Soup - cooking recipe

Ingredients
    6 lb. chicken back and parts
    3 to 4 qt. water
    3 peeled onions
    2 cloves garlic
    1 1/4 Tbsp. salt
    3 peeled carrots
    1 bunch parsley
    parsley root
    fresh or dried dill
Preparation
    Soak the chicken parts in cold water, changing the water frequently.
    Place the water, chicken and onions in a large pot and bring to a boil.
    Simmer 2 to 3 hours.
    Add remaining ingredients; cover and simmer for another hour or so.
    Serve with noodles, rice or matzo balls.
