"Tropical Carrot Cake" - cooking recipe

Ingredients
    2 tsp. baking soda
    2 tsp. cinnamon
    2 c. whole wheat flour
    1 c. vegetable oil (or preference)
    1 1/4 c. fructose or 8 pkg. Sweet 'N Low
    4 eggs
    1 tsp. vanilla
    2 c. grated carrots
    1 c. raisins
    1 c. shredded coconut
    1 c. chopped nuts
Preparation
    Mix together baking soda, cinnamon and flour.
    Cream together the oil and fructose (or whatever sweetener desired).
    Beat in the eggs one at a time.
    Add vanilla.
    Beat in flour mixture.
    Stir in the carrots, raisins, coconut and nuts.
    Bake in a greased 13 x 9 x 2-inch pan at 350\u00b0 for 25 to 30 minutes until lightly browned or until an inserted toothpick comes out clean.
    Yield: 12 servings.
