Ginger Peanut Chicken - cooking recipe

Ingredients
    12 to 14 chicken pieces
    1 Tbsp. each salt and ground ginger
    1/4 c. vegetable oil
    1 c. chopped onion
    2 (16 oz.) cans whole tomatoes, chopped
    1 (6 oz.) can tomato paste
    pineapple chunks (if desired)
    1 (4 1/2 oz.) can chopped mild green chilies
    1 to 2 Tbsp. finely chopped ginger root
    1/2 tsp. red pepper flakes
    1 clove garlic, pressed
    2 c. hot water
    3/4 c. creamy peanut butter
Preparation
    Remove skins from chicken.
    Sprinkle chicken with salt and ground ginger. Heat vegetable oil in a large skillet over medium-high heat. Cook chicken in hot oil, turning occasionally, until chicken is browned on all sides, about 10 minutes.
    Transfer chicken to a plate, reserving pan drippings in skillet.
