Chilled Marinated Carrots - cooking recipe

Ingredients
    1 lb. fresh carrots
    1/4 c. chopped scallions
    2 Tbsp. chopped fresh parsley
    1/3 c. salad oil
    2 Tbsp. fresh lemon juice
    1/2 tsp. salt
    fresh ground pepper to taste
Preparation
    Scrub carrots and peel, if desired.
    Cut carrots in half crosswise, then cut into long slices.
    Cook carrots in small amount of boiling salted water in covered saucepan until just tender.
    Drain, if necessary.
    Cool.
    Combine remaining ingredients; toss with carrots.
    Chill, covered, for several hours.
