Zucchini-Potato Casserole - cooking recipe

Ingredients
    6 medium potatoes, peeled and sliced
    2 c. zucchini squash or eggplant, peeled and sliced
    1 large tomato, peeled and sliced or 1 c. tomato sauce
    1/2 green pepper, sliced
    1 c. shredded Mozzarella or Cheddar cheese
    salt, pepper, oregano, garlic powder and Parmesan cheese to taste
Preparation
    Layer in 2-quart casserole in this order:
    1/2 the potatoes, 1/2 the squash or eggplant, tomato or tomato sauce, green pepper, remaining squash, oregano, garlic powder and Parmesan cheese as desired and remaining potatoes.
    Salt each layer, especially the squash.
    Cook 15 minutes in microwave on High (if no carousel, turn 1/4 turn every 5 minutes).
    Let stand 5 minutes.
