Calico Corn Muffins - cooking recipe
Ingredients

1 c. cornmeal
1 c. all-purpose flour
1/4 c. sugar
1 Tbsp. baking powder
1/4 tsp. ground red pepper
1 c. milk
1 egg, beaten
1/4 c. margarine, melted
1 c. canned or frozen whole kernel corn
1/4 c. chopped red pepper
1/4 c. chopped onion
Preparation

In a medium bowl, combine cornmeal, flour, sugar, baking powder and red pepper.
Stir in milk, egg and margarine just until blended (batter will be slightly lumpy).
Stir in corn, chopped red pepper and onions until just mixed.
Spoon mixture into 12 lightly greased 2 1/2-inch muffin cups.
Bake at 400\u00b0 for 20 to 25 minutes or until done.
Remove from pan.
Cool slightly on wire rack.
Serve warm at room temperature.
