Chicken Salad - cooking recipe

Ingredients
    1 medium hen (about 4 lb.)
    chopped celery
    1 lemon
    mayonnaise
    salt
Preparation
    Clean and salt hen.
    Boil gently until tender, then cool.
    Pull meat from bones.
    Cut white meat in larger chunks than dark meat. Add 1 cup chopped celery to every 2 cups chicken.
    Add juice of 1 lemon and enough mayonnaise to make a moist salad.
    Salt to taste and add cayenne pepper, if desired.
