Grits For Fish Fry - cooking recipe

Ingredients
    3/4 c. chopped bell pepper
    1/2 c. bacon fat
    12 c. water
    1/3 c. chopped pimiento
    1/2 stick butter
    3/4 c. onion, chopped
    2 tsp. salt
    3 c. quick cooking grits
    1 lb. cooked bacon, crumbled
    8 oz. shredded mild Cheddar cheese
Preparation
    Spray Pam into pot.
    Cook green pepper and onion in bacon fat until tender but not browned.
    Add water and salt and bring to a boil.
    Reduce heat to low and add grits, pimiento and cheese and cook 5 minutes.
    Stir in butter and bacon.
    Remove from heat and serve when thickened.
