Carrot Pilaf - cooking recipe

Ingredients
    1 large carrot, grated
    1 small onion, chopped
    1 Tbsp. olive oil
    1 1/2 tsp. cumin
    1/4 tsp. cinnamon
    1/2 c. chicken broth
    2 c. cooked brown rice
    mint or parsley (optional)
Preparation
    Combine carrot and onion; cook in oil until tender.
    Add remaining ingredients until heated through.
    Garnish with chopped parsley or mint.
