Fruit Stuffed Pork - cooking recipe

Ingredients
    1 (3 lb.) boneless pork roast
    1/2 c. apricots, dried
    1/2 c. prunes, pitted
    2 pears
    1/4 c. apricot preserves
    2 Tbsp. Dijon mustard
    3 Tbsp. margarine
    2 Tbsp. brown sugar
    1/2 tsp. ground cinnamon
    2 red apples (cooking)
Preparation
    Cut pork loin lengthwise in 1/2, but not all the through. Open and spread flat.
    Arrange apricots and prunes down center. Fold pork in original shape.
    Secure with toothpicks.
