Zucchini Bisque - cooking recipe
Ingredients

2 Tbsp. butter or margarine
2 medium zucchini, sliced 1/8-inch
1 c. fresh mushrooms, sliced 1/4-inch
1 medium onion, sliced or chopped
1/4 c. parsley, chopped
3 Tbsp. butter or margarine
3 Tbsp. all-purpose flour
10 3/4 oz. chicken broth
3/4 c. whipping cream
pinch of pepper
Preparation
-
In 3-quart saucepan, melt 2 tablespoons of butter.
Add zucchini, mushrooms, onion and parsley.
Cook over medium heat until vegetables are crispy-tender (6 to 8 minutes).
