Ingredients

1 c. all-purpose flour
1/2 tsp. baking soda
1/2 c. margarine
1/2 c. peanut butter
1/3 c. sugar
1/3 c. packed brown sugar
2 egg whites
1/2 tsp. vanilla
1 c. rolled oats
Preparation

In a bowl, stir together flour and baking soda.
Set flour mixture aside.
In a large mixing bowl, beat margarine with electric mixer on medium to high speed about 30 seconds or until softened.
Add peanut butter, sugar and brown sugar to margarine. Beat until thoroughly combined, scraping sides of bowl occasionally.
Add egg whites and vanilla.
Beat until well combined.
Add flour mixture, then beat on low speed until combined.
Stir in oats.
