Spanish Pork Chops And Rice - cooking recipe

Ingredients
    4 (1-inch thick) pork chops (about 2 lb. in all)
    1 Tbsp. olive oil
    2 onions, sliced
    1 green bell pepper, cut into chunks
    1 tomato, cut in wedges
    2 cloves garlic, minced
    1/2 tsp. turmeric
    3/4 tsp. pepper
    1/2 tsp. paprika
    1 tsp. ground cumin
    salt to taste
    2/3 c. rice
    1 1/3 c. chicken stock
    1/3 c. black olives, pitted and cut up
    2 Tbsp. chopped parsley
Preparation
    Brown chops in oil over medium-high heat for about 8 minutes. Remove.
    Add onions and green pepper; cover and cook 3 minutes. Add tomato, garlic, spices, salt and rice; stir 1 minute.
    Add stock; cover and simmer 5 minutes.
    Add chops and any accumulated juices.
    Cover and cook until rice is done and chops are cooked through, about 20 minutes.
    Sprinkle with olives and parsley.
