Zucchini Bread - cooking recipe

Ingredients
    3 large eggs
    1 c. oil
    2 c. granulated sugar
    3 tsp. vanilla extract
    2 c. peeled, grated zucchini
    3 c. all-purpose flour
    1 tsp. salt
    1 tsp. baking soda
    3 tsp. ground cinnamon
    1/4 tsp. baking powder
    1/2 c. chopped nuts
    1 can coconut (optional)
Preparation
    Beat eggs; add oil, sugar, vanilla and grated zucchini and beat again.
    Sift dry ingredients together.
    Add to batter and beat until smooth.
    Fold in nuts and coconut (reserving 1/2 cup to sprinkle over batter).
    Pour batter into 2 greased loaf pans and sprinkle with remaining coconut.
    Bake in a 350\u00b0 oven for 1 hour.
