Homemade Mincemeat - cooking recipe

Ingredients
    1 hog head, cooked and boned or an 8 lb. pork roast
    4 lb. beef suet
    3 qt. sour cherries
    3 qt. apples
    2 boxes golden raisins
    1 box dark raisins
    12 oz. citron
    1/2 tsp. ginger
    2 tsp. cloves
    1 qt. blue grape juice
    juice of 4 lemons
    juice and pulp of 4 oranges
    2 orange rinds, chopped
    10 c. brown sugar
    4 Tbsp. vinegar
    2 Tbsp. salt
    2 Tbsp. allspice
    4 tsp. nutmeg
    2 Tbsp. cinnamon
Preparation
    Mix
    all ingredients together in a large pot and simmer 1 hour.
    Pack
    hot into jars and process pints and quarts for 20 minutes at 10 pounds pressure.
