Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant
    3 slices toasted bread soaked in 1/2 c. milk
    2 eggs, slightly beaten
    1 medium onion, chopped
    3 Tbsp. melted butter or oleo
    1/2 c. grated cheese
    Salt and pepper to taste
Preparation
    Peel eggplant, cube, and boil until tender in salt water. Drain and mash.
    Mix bread that has been soaked with eggplant and add eggs, onion, oleo, and seasonings.
    Mix well and pour into a greased one-quart casserole.
    Top with cheese and bake at 350\u00b0 for 30 minutes.
    Serves 6.
