Diabetic Apple Muffins - cooking recipe
Ingredients

1 2/3 c. all-purpose flour
2 1/2 tsp. baking powder
1/2 tsp. salt
sugar substitute to equal 1 Tbsp. sugar
1 tsp. cinnamon
1/4 tsp. nutmeg
1 egg, slightly beaten
2/3 c. skimmed milk
1/4 c. diet oleo, melted
1 c. apples, minced
Preparation

Sift flour, baking powder, salt, sugar substitute and spices into a medium mixing bowl.
Combine egg, milk and oleo.
Add egg mixture to dry ingredients.
Blend only until flour is moistened. Fold in apples and pour batter into 12 non-stick muffin cups, filling 2/3 full.
Bake in oven at 400\u00b0 for 25 to 30 minutes.
