Red Beans And Rice - cooking recipe

Ingredients
    1 lb. dried red beans
    1 tsp. baking soda
    1 Tbsp. fresh ginger
    1 large onion, chopped coarsely
    2 Tbsp. garlic powder
    4 pieces fresh garlic, sliced
    1/2 lb. fresh pork neck bone
    water
    salt and pepper to taste
    cooked rice
Preparation
    Wash and sort dried beans. Put to boil, covered with water. Add baking soda.
    Cover and allow to stand in water at least 1 hour or overnight, then drain and rinse well.
    Add remaining ingredients and cover with water.
    Bring to a boil.
    Cover and cook at medium heat until beans are tender (can mash easy with fork). Serve over cooked rice.
