Cream Of Broccoli Soup - cooking recipe

Ingredients
    2 Tbsp. butter
    1 onion, chopped fine
    2 Tbsp. flour
    5 c. chicken broth
    1 lb. fresh broccoli, cooked
    1/2 tsp. salt
    1/4 tsp. pepper
    1/2 c. cream or undiluted evaporated milk
Preparation
    Saute onion in heated butter in a saucepan for 3 minutes until softened.
    Add the flour and stir in chicken broth.
    Cover and simmer 20 minutes.
    Mix together the cooked broccoli and 1 cup of the liquid.
    Beat or process mixture in a blender until smooth. Return puree to the soup mixture in the saucepan.
    Add salt, pepper and cream; heat to boiling.
    Serve in warm bowls and garnish with grated Cheddar cheese.
    Yields:
    6 servings.
