Pumpkin Pancakes - cooking recipe
Ingredients

2 c. flour
2 Tbsp. sugar
4 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1 1/2 c. milk
1 c. canned pumpkin
4 egg yolks/whites, separated
1/4 c. melted margarine or butter
Preparation

Mix or sift dry ingredients in a large bowl.
Combine milk, pumpkin, yolks and margarine.
Beat the 4 egg whites until they are stiff.
Fold into batter.
Pour onto lightly greased griddle.
Cook until top if bubbly; flip.
(You may need to add a little extra milk to thin the batter, if desired.)
