Country Ham-Redeye Gravy - cooking recipe
Ingredients

2 to 3 (1/4-inch thick) slices country ham
1 tsp. sugar
1/4 c. strong coffee
1/2 c. water
Preparation

Place ham slices in a cold cast-iron skillet.
Cook over medium heat until fat is crisp, turning several times for even cooking.
Remove ham to warm platter.
Pour excess fat from skillet, leaving about 2 tablespoons.
Stir sugar into fat and meat drippings in skillet.
Add coffee and water; heat to boiling. Serve over ham slices.
