Christmas Gumbo - cooking recipe

Ingredients
    3 Tbsp. butter
    1/2 c. chopped onion
    1/2 c. chopped celery
    1/2 c. chopped carrots
    1/2 c. chopped turnips
    12 peppercorns
    2 bay leaves
    6 cloves
    1/4 c. vinegar
    4 c. cold water
    4 shavings lemon peel
    2 lb. washed fish bones, heads, tails, skins and trimmings
    6 Tbsp. butter
    6 Tbsp. flour
    1 large yellow onion, chopped fine
    1/2 c. green pepper, chopped
    1 c. okra, sliced thin (fresh or frozen)
    chopped fresh basil and oregano
    1/2 tsp. salt
    3 dashes Tabasco sauce
    1 can tomatoes (with juice) or 1 c. tomato sauce
    1/2 lb. shrimp (fresh or frozen)
    any available fresh fish
Preparation
    Cook together for 10 minutes the butter, onion, celery, carrots and turnips. Add peppercorns, bay leaves, cloves, vinegar, water, lemon peel and fish.
