Apple Butter - cooking recipe

Ingredients
    16 c. unsweetened applesauce
    2 Tbsp. lemon or lime juice
    1/2 c. vinegar
    7 c. sugar
    1 Tbsp. allspice
    2 Tbsp. cinnamon
    1 Tbsp. cloves
    1 tsp. nutmeg
Preparation
    In a roaster (no lid) mix everything together.
    Bake at 325\u00b0, stirring 2 to 3 times per hour, until thick.
    Pour into hot jars and process 10 minutes or freeze after the jars cool.
    Yields nearly 7 pints.
