Pinto Beans - cooking recipe

Ingredients
    8 c. dry pinto beans, washed
    1 smoked ham hock
    1 large onion, chopped
    1/2 c. molasses or honey
    2 Tbsp. chile piquin
    3 Tbsp. garlic powder or fresh minced
    salt to taste
    enough water to cover beans, 3 or 4 inches
Preparation
    Sort and wash beans and place them in a large pot and cover them with water.
    At this point you can let them soak overnight or cook them overnight.
    I prefer the latter.
    Add all the other ingredients, cover pot and bring to a boil.
    Then reduce heat and simmer on low heat all night or day.
    Check the water and stir occasionally.
