Date Carrot Cake - cooking recipe
Ingredients

1 (20 oz.) can crushed pineapple, drained well
1 c. margarine, softened
3/4 c. brown sugar, packed
3/4 c. white sugar
4 eggs
1 lb. carrots, shredded
1 (8 oz.) pkg. chopped dates
2 tsp. vanilla
3 c. flour
2 tsp. baking soda
1 tsp. cinnamon
1 tsp. ginger
1/2 tsp. salt
powdered sugar
Preparation

Preheat oven to 350\u00b0.
Cream margarine and sugar until light and fluffy; beat in eggs.
Add pineapple, carrots, dates and vanilla, beating well.
Combine dry ingredients and gradually add to creamed mixture.
Pour into greased 9 x 13-inch pan.
Bake at 350\u00b0 for 50 to 60 minutes or until done.
Cool completely. Sprinkle top of cake with powdered sugar.
