Eggplant Casserole - cooking recipe

Ingredients
    1 medium eggplant, peeled and sliced
    1 1/2 c. saltines, crumbled
    4 eggs
    1/2 tsp. pepper
    1 stick margarine, melted
    1 1/2 c. milk
    1 tsp. salt
    1 1/2 c. sharp cheese, grated
Preparation
    Cook eggplant until mushy; drain.
    Add all ingredients, reserving 1/2 cup cheese, 1/2 cup crumbs and a small amount of margarine.
    Mix well.
    Pour into baking dish; sprinkle with remaining cheese, cracker crumbs and melted margarine.
    Bake at 325\u00b0 to 350\u00b0 for 25 to 30 minutes.
