Mexican Chicken Manicotti - cooking recipe

Ingredients
    8 uncooked manicotti shells
    1 1/2 c. cut up, cooked chicken or turkey
    1 c. shredded carrots
    1 c. Ricotta cheese
    2 Tbsp. sliced green onion
    2 Tbsp. chopped fresh or 2 tsp. dried cilantro
    1 clove garlic, freshly chopped
    1 c. salsa
    1/4 c. shredded Monterey Jack cheese with jalapeno peppers
Preparation
    Heat oven to 325\u00b0.
    Cook manicotti as directed on package; drain.
    Mix chicken, carrots, Ricotta cheese, onion, cilantro and garlic.
    Fill shells with mixture.
    Arrange shells in an ungreased rectangular 13 x 9 x 2-inch pan.
    Pour salsa over manicotti. Sprinkle with Monterey Jack cheese.
    Cover and bake 35 minutes or until hot in center.
    Makes 4 servings.
