Chicken And Rice - cooking recipe
Ingredients

1/2 c. chopped onion
1 c. diced celery
1 small carrot, sliced thin
1 c. uncooked rice
1 (4 to 5 lb.) stewing chicken
4 c. chicken broth
1/2 c. butter
salt and pepper to taste
Preparation

Cook chicken and save broth.
Melt butter in a Dutch oven or large stew pot.
Add onions, celery and carrot.
Cook until onions are golden.
Add broth, rice and seasonings.
Cover and cook on low heat until rice is done, about 20 minutes.
Add chopped chicken and simmer about 15 minutes more.
