Spicy Dry Black-Eyed Peas - cooking recipe

Ingredients
    1 (16 oz.) bag black-eyed peas (dry)
    1 c. chopped onion
    1 c. rice, uncooked
    1 lb. sausage, browned (country pork)
    1/2 green pepper, chopped
    1/4 tsp. Tabasco sauce (optional)
    salt and pepper to taste
Preparation
    Cook dry peas according to package directions until 2/3 done. Add remaining ingredients and simmer until peas are tender.
