Lime Chiffon Pie - cooking recipe

Ingredients
    1 Tbsp. unflavored gelatin
    1/4 c. cold water
    1 c. sugar
    1/2 c. lime juice and 1 tsp. grated rind
    1/2 tsp. salt
    4 eggs
Preparation
    Baked pastry shell or graham cracker crust.
    Dissolve gelatin in cold water and let stand 5 minutes.
    Add 1/2 cup of the sugar, lime juice and salt to the beaten egg yolks.
    Beat well and cook over boiling water, stirring until it's like custard.
    Add the softened gelatin and lime rind.
    Stir well and cool.
    Beat egg white until stiff and blend with rest of sugar (1/2 cup).
    Fold egg whites into cool lime and yolk mixture.
    Heap into pie shell and chill in refrigerator at least 2 hours.
    Can cover with whipped cream if desired when serving.
