Microwave Rice Pilaf - cooking recipe
Ingredients

1/4 c. chopped onion
1/4 c. chopped celery
1/4 c. chopped green pepper
2 Tbsp. margarine or butter
1 c. hot water
1 (4 oz.) can sliced mushrooms, drained
1/3 c. uncooked long grain rice
1 Tbsp. instant chicken bouillon
Preparation

Combine onion, celery, green pepper and margarine in 1-quart casserole.
Microwave on High (100%) until vegetables are tender-crisp, 3 to 5 minutes.
Stir in remaining ingredients; cover.
Microwave on High for 5 minutes.
Reduce power to Medium; microwave until liquid is absorbed, 10 to 12 minutes.
Let stand, covered, 5 minutes.
Fluff with fork before serving.
Yields 2 to 3 servings.
