Spicy Black-Eyed Peas - cooking recipe
Ingredients

6 to 8 slices bacon
2 c. chopped onion
2 c. chopped celery
2 c. chopped green pepper
3 (15 oz.) cans black-eyed peas, drained
1 (16 oz.) can whole tomatoes (undrained), chopped
1 (10 oz.) can whole tomatoes and green chilies (undrained), chopped
1 tsp. salt
1/4 tsp. pepper
Preparation

Cook bacon in a large skillet until crisp; remove bacon, reserve drippings in skillet.
Crumble bacon and set aside. Saute chopped onion, celery and green pepper in bacon drippings until vegetables are crisp-tender.
Add reserved bacon, black-eyed peas and remaining ingredients; stir well.
Bring mixture to a boil; reduce heat and simmer, uncovered, 30 minutes.
Yields 10 to 12 servings.
