Chicken Pot Pie - cooking recipe
Ingredients

1 pkg. pie crust mix
1 chicken and water to cover
1 onion, chopped
2 stalks celery, chopped
1/2 c. onion, coarsely chopped
1 sprig parsley
1 c. peas, canned or frozen
1 c. carrots, canned or fresh
1- 4 oz. can mushrooms, drained
4 Tbsp. oleo
4 Tbsp. flour
Salt and pepper to taste
Preparation

Boil chicken and next 4 ingredients until chicken is tender. Remove chicken.
Strain broth.
Remove chicken from bone and cut into bite size pieces.
If using fresh carrots, boil carrots, celery and onions in 2 c. chicken stock until tender.
Drain, mix all veggies together.
Prepare crust according to directions and roll out.
Put bottom crust in casserole dish, brown in oven at 350\u00b0.
Remove and cool.
Put vegies in crust.
Make roux with 4 Tbsp. oleo and 4 Tbsp. of flour.
Add 2 c. stock, stir until thickened.
Salt to taste.
Pour over vegies.
