Microwave Peanut Brittle - cooking recipe

Ingredients
    1 c. cocktail nuts
    1 c. sugar
    1/2 c. white corn syrup
    1 tsp. vanilla
    1 tsp. baking soda
    1 tsp. butter
Preparation
    In a 1 1/2-quart casserole, stir together peanuts, sugar and salt.
    Microwave 8 minutes on High, stirring well after 4 minutes. Stir in butter and vanilla and microwave on High 3 minutes longer.
    Add baking soda and quickly stir until light and foamy. Immediately pour into lightly greased baking sheet; spread out very thin.
    When cool, break into small pieces.
    Store in airtight container.
    Makes 1 pound.
