Green Chili Enchiladas - cooking recipe

10 to 12 tortillas
8 oz. Monterey Jack cheese, shredded
1 c. chopped onion
1/4 c. flour
1/4 c. oil or oleo
2 c. chicken broth
1 (7 oz.) can Old El Paso green chiles (mild)
1 c. sour cream
Preparation

Cook tortillas in hot oil (about 15 seconds on each side). Place 2 tablespoons cheese and 1 tablespoon onion on each and roll. Place in flat 9 x 13-inch baking dish.
Saute 1/4 cup onion in oil or oleo. Add flour and stir in broth.
Cook until thick. Add sour cream and chiles. Continue cooking until this is heated. Pour mixture over rolled tortillas. Bake at 425\u00b0 for 20 minutes.
