Chicken And Shrimp Scampi - cooking recipe

Ingredients
    1 (3 1/2 lb.) broiler/fryer, cut up
    1 Tbsp. salt
    1/2 tsp. pepper
    1/4 c. butter or margarine
    3 small onions, finely chopped
    1 garlic clove, minced
    3 Tbsp. chopped parsley
    1/2 c. Port wine
    1 (8 oz.) can tomato sauce
    1 tsp. dried basil
    1 lb. raw shrimp, shelled and deveined
Preparation
    Rub chicken well with salt and pepper.
    In large skillet in hot butter, saute chicken until golden.
    Add onions, garlic, parsley, wine, tomato sauce and basil.
    Simmer, covered, about 30 minutes or until chicken is tender.
    Push chicken to one side of skillet.
    Turn up heat so tomato mixture boils.
    Add shrimp. Cook, uncovered, 3 minutes or until just pink.
    Skim off any fat. Makes 6 servings.
