Ingredients

1 c. unbleached white flour
1 c. whole wheat pastry flour
1 1/2 Tbsp. fructose
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 c. milk
3 eggs, separated
1/2 c. canola oil
Preparation

Stir together dry ingredients with whisk or fork.
Separate the eggs and blend the yolks well with milk and canola oil. Lightly blend dry ingredients with the liquid ingredients until there are no lumps.
Beat egg whites until they peak and fold them into batter.
Bake in greased waffle iron until golden brown. Serves 6.
