The "No Guilt" Fruitcake Treat - cooking recipe

Ingredients
    1 c. (4 1/2 oz.) wheat germ
    1 c. Quick Oats
    1/4 c. plus 2 Tbsp. all-purpose flour
    1 tsp. each grated: lemon and orange peel
    1/2 tsp. each: cinnamon, allspice, cardamon, baking soda
    1/4 tsp. each: cloves, ginger, nutmeg, and salt
    1/2 c. egg substitute
    1/4 c. firmly packed brown sugar
    1 Tbsp. brandy or dark rum
    1/2 tsp. vanilla extract
    1 (6 oz.) pkg. dried mixed fruit bits
    2 small Granny Smith apples peeled and grated
Preparation
    Preheat oven to 350\u00b0.
    Spray 2 large heavy weight cookie sheets with cooking spray or line mini-muffin tins with paper liners, spray with cooking spray.
    Set aside.
