Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. salad oil
    2 c. sugar
    2 c. grated, peeled squash
    2 tsp. vanilla
    3 c. flour
    1 tsp. soda
    1 tsp. salt
    1/2 tsp. baking powder
    3 tsp. cinnamon
    1/2 c. nuts
Preparation
    Beat eggs until light and foamy.
    Add next 4 ingredients.
    Mix lightly, but well.
    Add to flour mixture and blend.
    Add nuts. Bake in 4 small loaf pans, well greased, for 45 minutes at 325\u00b0. Remove from pans immediately and cool.
    Great for freezing.
    Makes 4 small loaves or two 9-inch square pans.
