Mother'S Potato Rolls - cooking recipe

Ingredients
    2 pkg. yeast
    1/2 c. warm water
    1 c. hot mashed potatoes
    1 c. hot potato water (water potatoes were cooked in)
    1 c. butter
    2/3 c. sugar
    1 Tbsp. salt
    2 eggs
    8 c. all-purpose flour
Preparation
    Sprinkle yeast in lukewarm water and set aside.
    Combine potatoes, potato water, butter, sugar and salt.
    Stir until butter is melted.
    When this mixture is lukewarm, add yeast and eggs. Work in 4 cups flour, 1 cup at a time.
    When well mixed, work in 3 1/2 cups more flour.
    Use last 1/2 cup on board.
    Knead dough until smooth and satiny.
    Place in greased bowl, cover with damp cloth and let rise in warm place until doubled in size.
    Punch down and shape into rolls or loaves.
    Brush with melted butter. Cover with waxed paper and allow to rise until doubled in size. Bake in 425\u00b0 oven until brown.
