Tiny Apple Cheesecakes - cooking recipe

Ingredients
    8 vanilla wafer cookies
    1 c. chopped, peeled sweet apples
    1/2 tsp. ground cinnamon
    1 egg
    1 tsp. vanilla extract
    1 Tbsp. butter
    6 Tbsp. granulated sugar
    1 pkg. (8 oz.) cream cheese
    1/3 c. sour cream
Preparation
    Preheat oven to 325\u00b0.
    Place paper liners in eight (1/3-cup) muffin cups.
    Place a cookie in bottom of each; set aside.
    In a small skillet, melt butter.
    Add apples; cook and stir until tender, about 5 minutes.
    Sprinkle with 1 tablespoon sugar and cinnamon; spoon over cookies.
    With an electric mixer beat cream cheese, egg, sour cream, vanilla and remaining 5 tablespoons sugar until smooth.
    Spoon over apples. Bake until set, 25 to 28 minutes.
    Cool on a rack; remove cakes.
    Cover and refrigerate until cold, about 2 hours.
    Garnish with sour cream, apple slices and crushed vanilla wafers.
