Maine Blueberry Muffins(Diabetic Recipe) - cooking recipe

Ingredients
    1 3/4 c. plus 2 tsp. flour
    1 c. blueberries, rinsed
    1 Tbsp. baking powder
    1/4 tsp. nutmeg
    1/4 tsp. cinnamon
    2 eggs or 1/2 c. egg substitute
    1/4 c. vegetable oil
    3/4 c. orange juice
    1 tsp. lemon or orange rind, grated
Preparation
    Lightly coat blueberries with 2 teaspoons flour.
    You can shake the flour and berries together in a paper bag.
    In a large bowl, mix together the 1 3/4 cups flour, baking powder, nutmeg and cinnamon.
    In a small bowl, beat eggs lightly.
    Add oil, orange juice and grated rind.
    Add the liquid to dry mixture and stir a few times gently.
    Before the 2 mixtures are fully combined, add berries and rind.
    Spoon into muffin cups coated with nonstick vegetable spray.
    Fill each one two-thirds full.
    Bake at 400\u00b0 for 20 to 25 minutes.
    Makes 12 servings.
