Orange Muffins With Topping - cooking recipe
Ingredients

2 c. all-purpose flour
1/4 c. granulated sugar
1 Tbsp. baking powder
1/4 tsp. salt
1/2 c. orange juice concentrate
1/2 c. low sugar orange marmalade
3/4 c. nonfat buttermilk
1/4 c. vegetable oil
1/4 c. egg substitute
1 tsp. orange extract (optional)
Preparation

In a large bowl, combine flour, sugar, baking powder and salt. In another bowl, blend together the orange juice concentrate, orange marmalade, buttermilk, vegetable oil and egg substitute. Add to the flour mixture, stirring just until dry ingredients are moistened.
Spray muffin cups with nonstick vegetable cooking spray; fill 2/3 full in a small bowl.
