Mashed Potato And Cheddar Casserole - cooking recipe
Ingredients

5 medium potatoes, peeled and cut into chunks
1/2 c. butter or margarine
2 eggs, beaten to blend
salt and pepper
1 c. grated sharp Cheddar cheese
Preparation

Preheat oven to 375\u00b0.
Butter a 2-quart souffle or casserole dish. Cook potatoes until tender. Drain and mash.
Add butter and eggs. Beat until smooth and airy.
Season with salt and pepper. Transfer to baking dish and sprinkle cheese over.
Bake until cheese is melted and potatoes are heated through (about 20 minutes).
Serves 4.
