Kres Me Melinzana(Beef With Eggplant) - cooking recipe

Ingredients
    2 lb. beef, cubed
    2 large onion, sliced thin
    1 can tomato sauce or solid pack tomatoes
    1 tsp. mint
    1 Tbsp. parsley
    salt and pepper
    1 large eggplant, cubed
Preparation
    Brown meat and onions in butter or shortening.
    Add tomato sauce, mint, parsley and seasonings.
    Let simmer until meat is almost cooked, about 1 1/2 hours.
    Soak eggplant in salted water; drain and re-wash.
    Put into meat mixture and cook until done, approximately 20 minutes.
    Serves 4 to 6.
