Ingredients

2 c. leftover mashed potatoes
1 small onion, chopped
1 egg, beaten
1/2 tsp. salt
1/2 to 3/4 c. flour
dash of pepper
Preparation

Mix all ingredients thoroughly.
With large spoon, drop batter in hot oil in skillet.
Keep pancakes small.
Fry on both sides until brown.
