Greek-Potato-Tomato Skillet - cooking recipe

Ingredients
    6 potatoes, peeled and sliced
    3 onions, sliced
    4 Tbsp. olive oil
    1/4 c. fresh parsley, chopped
    4 medium tomatoes, peeled (optional) and diced or 1 (8 oz.) can tomato sauce
Preparation
    Saute potatoes and onions in olive oil until golden and tender, not brown.
    Discard excess oil.
    Add parsley, salt and tomatoes.
    Cook, covered, over low heat until potatoes are tender.
