Cornbread Stuffed Peppers - cooking recipe
Ingredients

1 pan baked cornbread
1 onion, diced
1 (16 oz.) can corn, drained
1 (16 oz.) can stewed tomatoes, chopped
1 (16 oz.) can LeSueur peas, drained
1 to 2 lb. ham, cut into 1-inch squares
6 large peppers, parboiled
6 strips bacon
Preparation

Preheat oven to 300\u00b0.
Crumble cornbread into a large mixing bowl.
Add corn, tomatoes, onions and peas.
Mix until evenly moist.
Add ham and mix thoroughly.
Stuff mixture into bell peppers.
Place in large glass baking dish. Spoon excess stuffing around peppers and place 1 strip bacon on top of each pepper. Bake 40 minutes.
