Vegetable Quick Bread - cooking recipe

2 c. all-purpose flour
1 c. whole wheat flour
1 c. sugar
1 Tbsp. baking powder
1 1/2 tsp. ground cinnamon
1 tsp. salt
1/2 tsp. baking soda
1/4 tsp. ground ginger
1/3 c. shortening
2 c. shredded carrots or zucchini
1/2 c. finely chopped nuts
1/2 c. chopped dates or raisins
2 eggs
3/4 c. milk
Preparation

Preheat oven to 350\u00b0.
Combine flours, sugar, baking powder, cinnamon, salt, baking soda and ginger in large bowl.
Cut shortening into dry ingredients with pastry blender until mixture resembles coarse crumbs.
Stir in carrots, nuts and dates.
Beat eggs and milk together with fork; add to bowl and stir only until dry ingredients are moistened.
Batter will be stiff.
Pour batter into 2 well-greased loaf pans.
Bake at 350\u00b0 for 1 hour or until done.
Cool for 10 minutes in pan.
Remove from pan and cool on rack before slicing.
