Mid-West Casserole - cooking recipe

Ingredients
    1/3 c. margarine
    1 c. shredded cabbage
    1 c. grated carrot
    1 c. grated raw potato
    1/4 c. finely chopped celery
    1/4 c. minced onion
    2 Tbsp. chopped parsley
    4 egg yolks, well beaten
    1/2 c. milk
    1 c. cubed whole wheat bread
    1/2 tsp. salt
    1/8 tsp. pepper
    4 egg whites, stiffly beaten
Preparation
    Melt margarine in saucepan.
    Add cabbage, potato, celery, carrot, onion and parsley.
    Cook over low heat 5 minutes.
    In bowl, combine egg yolks and milk; blend in bread cubes, salt and pepper.
    Gradually blend in vegetable mixture.
    Fold in stiffly beaten egg whites.
    Pour into well-greased 1 1/2-quart casserole. Bake at 350\u00b0 for 45 minutes.
